I created this recipe last summer on a whim when my sister-in-law and her family were visiting. There were 17 of us at the house, and I knew that all the guys were huge meat lovers.

For years, I’ve made some variation of this Pumpkin Cheesecake as part of our family’s Thanksgiving dinner. I’ve always added whipped cream, pecans and a drizzle of caramel over the top to accent the fall-inspired flavors of this decadent dessert.

But this year I got a brainstorm: Bacon. 

Caramel. BACON. Over pumpkin-flavored cheesecake. Sprinkled with pecans. Gluten free. Here’s the perfect Thanksgiving dessert! What a great remake of pumpkin pie!

Yes, bacon! I was convinced that bacon could bring the already incredible cinnamon and ginger flavors of the pumpkin cheesecake to new levels of deliciousness.

And after putting together this recipe (and hearing the “oooohs” and “ahhhs” from my family) my suspicions were confirmed: This bacon and caramel pumpkin cheesecake sensation was something that had to be shared. 

To the point: This recipe was flat out incredible!

No, this pumpkin cheesecake is not low-fat. And it’s probably not very healthy for you (although the crust is gluten-free).

But once a year on Thanksgiving, I think this indulgence is more than alright, don’t you?

Important Recipe Tips for Caramel Pumpkin Cheesecake with Pecans & Bacon

muffin-panYou can make the recipe into a traditional round cheesecake shape, but how cute is it to make little muffin-sized cheesecake bites using a silicone muffin pan?

This way everyone can give this easy cheesecake recipe a try (and still eat a slice of pumpkin or pecan pie too)!

If you do decide to make cheesecake bites, it’s really important that you use a silicone muffin pan (and not a regular muffin pan) because the silicone keeps the crust and cheesecake from sticking to the cup.

You don’t want to go through the work of making your beautiful pumpkin cheesecake and then have it stick to the pan, right?! Ugh!

Plus, these silicone muffin pans are pretty handy for making muffins, mini quiches, cupcakes, mini cakes, and so much more! I use mine all the time!

However, if you prefer the traditional cheesecake shape (and cheesecake slices), simply create the crust in a springform pan (or buy a pre-made crust) and then pour the pumpkin cheesecake mixture into the pan. Bake for about 30-45 minutes longer than if you were making the cheesecake into muffin-sized bites.

NOTE: The gluten-free crust is an adaptation of a recipe in my all-time favorite Paleo cookbook Against All Grain by Danielle Walker. Part of the pumpkin cheesecake recipe is inspired by this one from The Jenny Evolution.

 

Carmel Pumpkin Cheesecake Bites with Pecans & Bacon (Gluten-Free)

Carmel Pumpkin Cheesecake Bites with Pecans & Bacon (Gluten-Free)

Ingredients

    Crust:
  • 1/3 cup almond flour
  • 1/2 cup coconut flour
  • 1/8 tsp salt
  • 1/8 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 cup coconut oil, softened
  • 1/4 cup maple syrup
  • 1 egg
  • 1/2 tsp pure vanilla extract
    Cheesecake:
  • 16 ounce can pumpkin puree
  • 2 lbs light cream cheese (or Neufchatel Cheese)
  • 2 cups cane sugar (or coconut sugar)
  • 1/4 cup maple syrup
  • 1/4 sour cream
  • 1 tsp vanilla extract
  • 1/2 tsp. ginger
  • 1 tsp. cinnamon
  • 1/4 tsp. cardamom
  • 1/4 tsp cloves
    Topping:
  • Can of whipped topping (not the spoonable kind in a tub)
  • jar of pre-made caramel
  • 1/2 cup whole pecans (plus about 2 tbsp chopped)
  • 4-5 bacon slices, cooked and cut into 1.5 inch wedges (plus 1-2 slices that are crumbled)

Instructions

  • Preheat oven to 350 degrees F. Add dry crust ingredients (almond flour, coconut flour, salt, baking soda, and cinnamon) to a small mixing bowl and stir until combined.

  • Make a small well in the middle of the dry ingredients and add in the wet crust ingredients (coconut oil, maple syrup, egg and vanilla extract). Stir the wet ingredients together, and then slowly stir the dry ingredients into the wet ingredients.

  • The crust mixture should be crumbly but firm enough that it sticks to itself when pressed with a spoon. If the crust looks too dry, add more coconut oil (one teaspoon at a time) until its sticky and holds together well.

  • Press the crust mixture into each cup in the silicone muffin pan (about 2 tablespoon of crust mixture into each cup). Again, don't forget to use a silicone muffin pan if you're making muffin bites (and not a regular muffin pan) because the silicone keeps the crust and cheesecake from sticking to the cup! If you're making a traditional cheesecake shape, press the entire mixture onto the bottom of a springform pan


  • Cook the crust in the preheated oven (5-7 minutes for the cheesecake bites; and 10-12 minutes if making a traditional cheesecake size).

  • After the crust has cooked, place the pan on an oven rack and allow it to cool to room temperature. Reduce the oven temperature to 325 degrees F.

  • Meanwhile, let's start making the delicious cheesecake filling! Mix the cream cheese and sugar with a handheld or standing mixer.

  • Once these have been combined, add the pumpkin puree, maple syrup, vanilla extract, ginger, cinnamon, cardamom and cloves and mix on a low speed until combined (don't overmix).

  • Gently mix in the sour cream.

  • Spoon the cheesecake mixture over the cooled crust (about 1/4 cup liquid to each cup for the cheesecake bites; and the entire mixture over the crust if making the traditional cheesecake shape).

  • Place muffin pan or springform pan in oven heated 325 degrees F. Place a small baking pan with a few cups of water in it on the rack underneath the cheesecake (this increases the humidity of the cooking environment and helps the cheesecake cook better).

  • Cook cheesecake until outsides and center look firm (about 1 hour for cheesecake bites and 1 hour 30 minutes for traditional cheesecake shape).

  • Remove from oven and allow to cool. You're going to be tempted to take them out sooner (it will smell so good in your house!) but don't do it!

  • Once the cheesecake is cool, remove the cheesecakes from the muffin pan by running a butter knife along the edge of each cup and then using a spoon to carefully lift them out onto a plate or serving tray. If using a springform pan, remove the springform edge.

  • Arrange the pecans on the cheesecake and, using a knife dipped in caramel, carefully drizzle caramel over the cheesecake.

  • Top with whipped topping. Place a 1.5 inch piece of bacon in the center of the whipped topping, and sprinkle the chopped pecans and bacon over the top. Drizzle more caramel over the whole thing if you're feeling especially decadent. Do this for each cheesecake bite or in several places on a whole cheesecake.


  • Slice (if cooking as a whole cheesecake), serve and enjoy!

Fall Sausage Skillet Supper with Sweet Potatoes and Apple

Ingredients

  • 1 pound smoked sausage, cubed
  • 3-4 large sweet potatoes, peeled and cubed
  • 1 large onion, diced
  • 1 large Granny Smith apple, chopped
  • other vegetables (optional: carrots, butternut squash)
  • 2 cloves garlic, minced
  • ginger (1 inch fresh, grated; or 1 tsp powder)
  • 1/2 tbsp cinnamon
  • 1 tbsp chili powder
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions

  • Add the olive oil to a large pan and saute the onions and sweet potatoes until they are almost cooked through. If you are including other vegetables in this dish such as carrots or butternut squash, add these at this time.

  • Add the cinnamon, chili powder, garlic and ginger to the skillet and cook for a few minutes, allowing the herbs to flavor the veggies.

  • Add the apple and the smoked sausage to the skillet. Cook for several minutes until the apple is soft and the smoked sausage is browned nicely.

  • Serve dish immediately (by itself, or over an optional bed of lettuce or other greens).

When fall rolls around and butternut squash is in season again, my heart goes pitter-pat because I know that I get to make this recipe: Butternut Squash Chicken Salad.

It truly is one of my favorite dinners to make during October and November.

And for several years in a row, it’s occupied the highly-coveted space of the “vegetable dish” that I bring every year to my family’s Thanksgiving celebration.

Warm Butternut Squash Chicken Salad with Maple & Cranberries

Warm Butternut Squash Chicken Salad with Maple & Cranberries

Ingredients

  • 1 medium-sized butternut squash, peeled and cubed
  • 2 tsp minced garlic
  • 1 tsp ground cinnamon
  • 1 tbsp ground cumin
  • 1 tbsp ground ginger
  • 1 tbsp chili powder
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 of a medium onion, diced
  • 1 lb cooked chicken breast, chopped
  • 6 cups deep leafy greens (kale, swiss chard, mustard greens, etc), chopped
  • 1 granny smith apple, thinly sliced
  • 1/2 cup dried cranberries
  • 1/3 cup chopped walnuts
    Marinade:
  • 1 tsp minced garlic
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tbsp real maple syrup
  • salt and pepper to taste

Instructions

  • Preheat oven to 425 degrees.

  • Place the cubed and peeled butternut squash along with the chopped onion in a large bowl and add 2 tsp of the minced garlic, cinnamon, cumin, ginger, chili powder, olive oil, maple syrup, salt and pepper. Toss all ingredients to coat.

  • Arrange the seasoned butternut squash and onion mixture on a cookie sheet and bake for approximately 25-30 minutes at 425 degrees or until the vegetables are fork-tender and caramelized-looking. Stir once during the cooking time.

  • While the veggies are cooking (and your kitchen begins to take on the dreamy aroma of cumin, chili powder and maple syrup), thinly slice the apple, chop the walnuts, and chop up the greens.

  • Mix together the remaining minced garlic, olive oil, apple cider vinegar and 2 tbsp maple syrup with a whisk in a small bowl to make the marinade.

  • Once veggies are done, allow them to cool slightly for a few minutes. Add the greens, chicken, walnuts and dried cranberries to the bowl. Top with the cooked veggies and the marinade. Mix everything together well.

  • Garnish each plate with a few slices of apple on top and serve immediately. Enjoy!

I’m not one of those people that drink coffee all day long, or even first thing in the morning.

But every once in a while (especially on rainy days like today at my house) I crave something warm and sweet (AKA a flavored coffee drink). Especially during fall!

Since a few people in my family can’t have dairy (and we’re all trying to limit the amount of refined sugar we eat), I created a few homemade healthy coffee creamer recipes for when that coffee craving hits.

It’s been my favorite pizza by far for years… and I recently found a way to make it even faster and easier than ever before (which has this very busy mama quite happy).

Now, if you’re gluten free like my husband and I are, you know that usually gluten free frozen pizza tastes pretty much like it sounds (like warm cardboard).

But this new pizza from Freschetta truly tastes fantastic! The crust is crisp and chewy like a good pizza should be. No sacrificing here!

And best of all, the four cheese combo makes it the perfect base for putting together this awesome Pear and Gorgonzola Salad Pizza recipe in under 20 minutes!

I’ve even made this recipe as a fancy appetizer for a dinner party (I just cut the pizza into small squares). Pear and Gorgonzola Salad Pizza

Pear and Gorgonzola Salad Pizza

Ingredients

  • 1 Freschetta Gluten Free Thin & Crispy 4 Cheese Medley Frozen Pizza
  • 4-5 cups mixed salad greens
  • 1 Green Anjou Pear, sliced thin
  • 1/4 cup walnuts, chopped
  • 4 Tbsp Gorgonzola cheese, crumbled
  • 3 Tbsp Extra Virgin Olive Oil
  • 3 Tbsp Apple Cider Vinegar
  • 1 tsp honey
  • 1/2 tsp garlic powder
  • 1 tsp dried thyme
  • dash salt and pepper
  • Optional: dried cranberries (not shown here, but are a great addition to the salad!)

Instructions

  • Preheat oven to 450 degrees. Remove the pizza from its wrapping and place it on a baking stone or cookie sheet.


  • Arrange the sliced pear in a circular pattern on top of the Freschetta frozen pizza (save 3-4 slices to use later as a topping for the salad).

  • Add about half the chopped walnuts to the pizza, making a group of walnuts in the center of the pears and then sprinkling a little over the whole pizza itself.


  • Gorgeous, right?! I love how the pears make that pretty pattern.

  • Place the pizza in the oven and cook for 12 to 16 minutes per package directions.

  • I’m so thankful that Freschetta makes it easy to enjoy delicious gluten-free pizza in minutes! Our kids eat regular pizza from time to time, and it’s nice that my husband and I can easily make our own gluten free version too (and not feel like we’re missing out)!

  • While the pizza is cooking, quickly assemble the salad. Add the gorgonzola cheese and the rest of the walnuts to the mixed greens in a medium sized bowl.


  • Combine the salad dressing ingredients (extra virgin olive oil, apple cider vinegar, honey, garlic powder and thyme) in a small bowl and whisk them quickly with a fork.

  • Add the salad dressing to the salad and toss everything together.


  • By this time, the wonderful smell of pizza will be filling your kitchen! And just think—it’s gluten-free pizza that tastes great and requires zero work from you! YES!

  • When it’s done cooking, it will look like this wonderful yumminess.


  • Yes, all that golden-browned cheese and toasted pear and walnut goodness does smell as good as it looks, I promise!


  • Now all that’s left is assembly! Carefully spoon the salad on top of the pizza. Arrange the remaining 3-4 pear slices on top.


  • And you’re done! It’s an incredibly tasty salad pizza gone gourmet and gluten free!

  • And it’s just darn pretty to look at, don’t you think?


  • All that’s left is to slice and serve! Enjoy with your family!
