Hi Alicia, I looked up your suggestion for coconut milk (the So Delicious brand) and the ingredients in it include xanthan gum, a highly processed item which is made from either corn, dairy, soy, or wheat ~ all to which my youngest daughter (now age 21) is allergic! Until I read about how xanthan gum was made, I had no idea she was being exposed to any of her allergy triggers in supposedly safe / allergy friendly foodstuff! (And I know what the ubiquitous “they” say about things being so highly processed that none of the “allergens” remain; all we know is that anything with xanthan gum in it still triggers reactions in her.)

Anyway, I’m curious as to why you said not to use canned full-fat coconut milk? I had to give up hot chocolate years ago as the oxalic acid in chocolate binds with calcium in cow’s milk to form calcium oxylate ~ kidney stones ~ it wasn’t worth the pain! And I’d love to be able to make a non-dairy hot chocolate without getting kidney stones, and also my daughter could enjoy it again without triggering her symptoms. 🙂 ~ K

    Hi there!

    Thank you so much for sharing more information about this brand of coconut milk! I’m sorry to hear about your daughter’s reactions to xanthan gum, and I can understand your concern about its presence in this product. You are more than welcome to use canned full-fat coconut milk here! I recommended the other since it’s a bit lighter and less expensive, especially if you’re planning to make several cups at once for a family. I also tend to have this type on hand more since we use it in cereal, etc. If you do use the canned variety, I’d omit the coconut oil used in the recipe since the canned coconut milk already has that richness that the coconut oil provides. Enjoy!
